How to make date balls

Raw Date Nut Balls Recipe

My latest passion is making yummy bliss balls and this raw date nut balls recipe is super fast and SO easy. You just need a food processor or a blender and 15 minutes!

You can add different flavours to suit your taste, but my current favourite is ginger and lemon. Here's the recipe:

Ingredients

  • 1 cup dates (big juicy Medjool are the best), stones removed and soaked in water for 15 minutes then drained
  • 1 tablespoon each ofchia seeds, sesame seeds, grated coconut, grated lemon, grated or finely chopped fresh ginger, goji berries soaked in water for 15 minutes then drained, carob syrup, olive oil
  • 3 tablespoons carob flour or cacao powder if you're a chocaholic!
  • 1 teaspoon vanilla extract, preferably with seeds for best flavour
  • 1 cup almonds

Method

Process the almonds first for 20-30 seconds until fine, but still with tiny pieces of nuts.

Place nuts into a bowl then put rest of ingredients in processor and pulse a few times until the mixture comes together.

Add the nuts and pulse again until you have a sticky but quite solid mixture.

Tip into a bowl and form small date nut balls with your fingers then roll in grated coconut - try to get good quality organic coconut not the cheap sawdust-like type, it tastes much better :)

Wash or lick your sticky fingers!

Place bliss balls in a container in the fridge for a couple of hours for them to firm up or if you can't wait to try them, in the freezer for 20 minutes!

Feel free to alter ingredients to your taste, substituting raisins for some of the dates, adding other healthy seeds or any other flavour you fancy. If you don't like coconut, leave it out or roll the bliss balls in your seed or dried berry of choice.

NB: Don't be tempted to put the nuts and the other ingredients in the processor straightaway to save time. You'll end up with a sticky lump of un-chopped nuts!
